This Skillet Lasagna is like my lazy version of the classic; it comes together in one skillet (yes, really!), and it’s on the table in about 30 minutes! It has all the cheesy, saucy, comforting goodness of classic lasagna and it's extra kid-friendly. Less mess, less stress, and all the lasagna flavor? That’s a win in my book!

How to make Skillet Lasagna:

Brown Beef: Sauté ground beef in olive oil over medium-high heat. Season with salt and pepper, brown fully, and drain excess grease.

Assemble: Add garlic, onion, pasta sauce, and seasonings. Season with salt and pepper, to taste then bring sauce to a simmer. Stir in dry pasta and water. Bring to a boil, then reduce heat and simmer until pasta is tender, about 13–15 minutes. Stir in mozzarella and parmesan, then dollop ricotta on top. Cover the pan for a few minutes to warm the cheese.

Serve: Garnish with fresh basil and enjoy immediately with a side salad or french green beans and breadsticks or garlic rolls.

  • Cook ground beef: Heat olive oil in a large skillet over medium high heat. Add ground beef and season with salt and pepper. Brown meat and remove some of the grease.
    1 Tablespoon olive oil, 1 pound ground beef
  • Finish sauce: Stir in garlic, minced onion, pasta sauce, oregano, basil, garlic powder and red pepper flakes. Season with salt and pepper, to taste.
    1 clove garlic, 1 Tablespoon dried minced onion, 24 ounces pasta sauce, ¼ teaspoon dried oregano, ¼ teaspoon dried basil, ⅛ teaspoon garlic powder, ⅛ teaspoon crushed red pepper flakes, salt and freshly ground black pepper
  • Add pasta: Bring sauce to a simmer and stir in pasta and water. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 13-15 minutes.
    8 ounces bite-size pasta, 1 ½ cups water
  • Finish: Remove from heat. Stir in parmesan and mozzarella cheese. Spoon a few scoops of ricotta on the top, and cover for a few minutes to allow the cheese to warm. Top with fresh basil. Serve immediately.

Make Ahead Instructions: To prep ahead of time, make the recipe up until adding the pasta. Store it in the refrigerator and add pasta and water when ready to finish cooking. 
Meat: Substitute ground turkey or use half ground Italian sausage for added flavor.
Cheese: Substitute cottage cheese for ricotta and substitute shredded cheddar or provolone for mozzarella.
Veggies: Add chopped bell peppers, mushrooms, spinach or other chopped veggies and sauté when adding the spices.
