I'm a tiny bit obsessed with how this high protein mac and cheese turned out. I really wanted a delicious, cheesy sauce, that didn't disappoint on flavor, and this turned out soo good! Cottage cheese blends right into the sauce, while freshly grated sharp cheddar brings that familiar mac and cheese flavor. This recipe makes four servings, so it's easy to portion. Sometimes I stir in some canned tuna and peas to increase the protein even more. I can't wait for you to try this one!

How to make Protein Mac and Cheese:

Cook Pasta: Cook the elbow macaroni just until al dente. Drain and set aside.

Make Sauce: Add the cottage cheese, milk, cornstarch, salt, and pepper to a small mixing bowl or blender. Use an immersion blender or blender to blend until smooth. Transfer the sauce to a saucepan over medium heat and bring to a very low boil, stirring frequently.

Combine: Remove from heat and stir in the freshly grated cheddar cheese. Once it has melted, stir in the cooked pasta. Taste and add additional salt and pepper to this cottage cheese mac and cheese if needed.

Ingredients

  • 8 oz elbow macaroni noodles
  • 3/4 cup low-fat cottage cheese
  • 3/4 cup skim milk or almond milk (or milk of choice)
  • 1 1/2 Tablespoons cornstarch
  • 1 cup freshly grated sharp cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • Cook pasta just until al dente. Drain and set aside.

Notes

Tuna Mac: Stir in 1 cup frozen peas and a 5-ounce can of tuna.
