Ingredients:

For the Chili:

  • 1 pound (450g) ground beef (or ground turkey for a leaner option)

  • 1 large onion, diced

  • 2 cloves garlic, minced

  • 1 green bell pepper, diced

  • 1 red bell pepper, diced

  • 2 cans (14.5 ounces/410g each) of diced tomatoes

  • 2 cans (15 ounces/425g each) of kidney beans, drained and rinsed

  • 1 can (15 ounces/425g) of black beans, drained and rinsed

  • 1 can (6 ounces/170g) of tomato paste

  • 2 cups (480ml) beef or vegetable broth

  • 2 tablespoons chili powder

  • 1 tablespoon ground cumin

  • 1 teaspoon paprika

  • 1/2 teaspoon cayenne pepper (adjust to taste)

  • Salt and black pepper to taste

Optional Toppings:

  • Shredded cheddar cheese

  • Sour cream

  • Sliced green onions

  • Chopped fresh cilantro

  • Sliced jalapeños

  • Tortilla chips

Instructions:

1. Brown the Meat:

  • In a large pot or Dutch oven, cook the ground beef (or turkey) over medium-high heat until it's browned and crumbled. Break it into smaller pieces as it cooks.

  • Once cooked, remove any excess fat.

2. Sauté the Aromatics:

  • Add the diced onion, minced garlic, green bell pepper, and red bell pepper to the pot.

  • Sauté the mixture for 5-7 minutes, or until the vegetables become tender.

3. Add the Tomatoes and Beans:

  • Stir in the diced tomatoes, kidney beans, black beans, and tomato paste.

  • Pour in the beef or vegetable broth.

4. Season and Simmer:

  • Add the chili powder, ground cumin, paprika, cayenne pepper, salt, and black pepper to the pot.

  • Stir to combine all the ingredients.

  • Bring the mixture to a boil.

  • Reduce the heat to low, cover the pot, and let it simmer for 30-45 minutes. Stir occasionally.

5. Adjust the Consistency:

  • If the chili becomes too thick, you can add more broth to reach your desired consistency.

6. Taste and Adjust:

  • Taste the chili and adjust the seasonings, adding more salt, pepper, or cayenne pepper to suit your preference.

7. Serve:

  • Ladle the hot chili into bowls.

  • Top with shredded cheddar cheese, a dollop of sour cream, sliced green onions, chopped fresh cilantro, and sliced jalapeños, if desired.

  • Serve with tortilla chips on the side.

Enjoy your delicious homemade chili! It's a versatile dish that can be customized in various ways. You can make it spicier by adding more cayenne pepper, or milder by reducing the chili powder. It's also great for meal prep and can be frozen for future meals. Chili is the ultimate comfort food that's perfect for gatherings, lazy weekends, and cozy evenings.
